This evening's menu will consist of:


Filet Mignon with Mushrooms and Shallots

Baked Loaded Pureed Potatoes

Caesar Salad

Red Lobster Biscuits

Baked Pears


Experimenting with the potatoes. I always add butter, cream, sour cream, bacon, green onions, chicken broth, and garlic & herb Boursin cheese, and parmesan cheese. But today I pureed the potatoes, and added 6 egg yolks for the 5 lbs of taters. They taste super good, just not sure about the texture. we'll see how they turn out after they're baked again.


Also might make a Bernaise sauce for the steak. Should have saved a shallot. :'(

Question for all the saucy people.


I made a bearnaise sauce that I was was happy with, however, now I wonder how it would be with a rich & bold red wine, balsamic, thyme, peppercorns, and a little mushroom added to the initial pre-reduction? Any other thoughts?


Also, I'm really loving incorporating egg yolks into shit now, might have to start making a ton of meringue.

They were aight. I used an Italian bread but something like crunchier almost would have been better I think hmm.

I moved and the garden stayed behind. Currently working on the new hard. Do have a tomato and pepper plant though.


Also…are radish and turnips the same things??

AH my bad, somehow totally forgot radishes existed!! XD Been eating a lot of turnips here lately. They look really similar, especially sliced...


Taste-wise not so similar. Turnips are milder, sweeter, more compact. Not as juicy and all but they're good to store a long time, haven't had a radish for some ~three months now.

Decided to do a little home style deep-frying over the weekend.


Never again... Place stinks, my lungs hurt, and grease splattered everywhere.


Don't get me wrong, the chicken tasted good. Soaked in buttermilk for 24 hours and a flour, creole, white pepper, msg, mustard, garlic spread mixture for 6 hours.


Maybe I went about it wrong too. What I wanted to do was get the avocado oil up to almost 500*F and start cooking, but my thermometer only goes to 400*F, so that's where I cooked at. Also gave it a quick role in the flour/spice for some extra crispiness, but all it did I think was contribute to a disgusting, burnt sludge at the bottom of the pot. Thinking I should have skipped the extra coating and cooked at a lower temp.


Definitely an outdoor cooking method for me now. I'll stick to Coq au vin, Carbonara, and steak with Bearnaise from now on.
